Seasonal Guava Jelly

I have never been much of a guava fan (except for guava juice funny enough- go figure!) but since I've discovered that my fiance' is a massive fan of them, I knew I had to start getting creative!

 

This jelly is great, not only because it's really easy to make, but because it contains no gelatin. 

 

Guavas are naturally high in pectin, a naturally occurring thickening agent that helps with stabilisation, so no need for additional thickeners!

 

Guavas are also super high in Vitamin C and help regulate blood pressure levels. So, get baking and be nourished!

 

 

G U A V A   J E L L Y

 

3 cups of guavas, skin removed and roughly chopped

3 cups water

1 Tbsp apple cider vinegar

¾ cup organic cane sugar

Juice of 2 limes

½ tsp rock salt

 

Homemade Vanilla & Poppy Seed Custard, to serve*

 

  1. Place all of the ingredients in a medium saucepan. Bring to a boil. Reduce heat to medium-low and simmer for 30 minutes. 

  2. Remove from heat and let cool. Pour mixture through a fine mesh sieve to separate out the seeds. Using a large spoon, press down on the solids to release the juices. 

  3. Return the now seedless mixture back to the saucepan and return to a boil. Reduce heat to medium-low and let simmer for 40 minutes or until thickened. 

  4. Remove from heat and let cool. Pour into jars and refrigerate until use. The jelly will thicken as it cools.

  5. Serve jelly with homemade vanilla & poppy seed custard!*
