Burnt butter adds a delicious nutty flavour to both sweet and
savoury dishes, so when I added this to my traditional banana bread
recipe, the results were gorgeous!
This is a must have treat for every occasion, every tea party and,
quite frankly, every damn day!
You can also add a couple tablespoons of cocoa powder for a
chocolate banana loaf, and easily swap the sugar to coconut sugar
for a healthier sweetening agent.

½ cup unsalted butter
3½ medium bananas, mashed, plus the other half of the banana sliced into three, lengthways
1 cup caster sugar OR coconut sugar
1 tsp NOMU vanilla extract
2 free range large eggs
2 cups cake flour, sifted
1 tsp baking powder
Pinch of rock salt
½ tsp ground cinnamon
¾ cup buttermilk
Preheat your oven to 180 degrees C and grease a rectangular loaf tray.
In a small pan, melt the better and allow to cook for 4 minutes, or until a golden brown colour. Remove from the heat and pour into a glass or metal mixing bowl.
Stir the butter with the sugar and vanilla, and then add the beaten eggs and mashed banana. Then stir in the buttermilk.
In a separate bowl, combine your flour, baking powder, rock salt and ground cinnamon. Add this dry mix to your wet banana mixture and give one last stir to combine all of the ingredinets.
Pour mixture into loaf tin and then arrange the three slices of banana onto the top of the mixture.
Bake for 45 minutes or until a cake tester comes out clean.
Serve warm with extra butter!
