In celebration of St Paddy's Day we're going green! But who am I kidding, I never need an excuse to eat avocado (and anything green for that matter!)
My Zesty Guacamole is the perfect snack to keep in your fridge because it pairs well with pretty much everything. I have this at home with seed crackers, homemade veggie chips, spicy chicken wraps and baked salmon.
My favourite is to add this to my zucchini noodles with some extra parmesan, chilli and a good glug of NOMU's extra virgin olive oil!
1 ripe avocado, mashed
Zest and juice of 1 lemon (or lime)
2 Tbsp roughly chopped parsley or coriander
1 tsp NOMU extra virgin olive oil (order yours here)
1/2 tsp Maldon Crystal Salt (the chilli salt from NOMU is also a great option)
1/4 red onion, finely chopped
1/2 clove garlic, finely chopped
Ground black pepper, to taste
Dried chilli flakes, to serve
1. Place all ingredients into a bowl and stir to combine.
2. Place in a serving bowl and serve with some extra parsley/ coriander, ground black pepper, Maldon salt, chilli and a glug of NOMU's extra virgin olive oil.
3. Serve with everything. I mean everything.
