Whenever you think of healthy desserts, your mind wonders to that sugar filled chocolate you COULD be eating. I don't know about you but I regularly have these moment's of "You know what? I trained hard this week, I ate at least 4 salads so I deserve this chocolate!" No Gabi, just no. Put it down.
These Chocolate Espresso Truffles are fudgy, dense, incredibly sweet and nails that sugar cravings. I make a double batch and store them in the freezer because they are so easy to make and you will have at least two a day. Trust me.
CHOCOLATE ESPRESSO TRUFFLES
2 cups organic dates, soaked in a double shot of espresso & 60ml water
1 tsp ground coffee
2 1/2 Tbsp raw cacao powder, plus extra for dusting
1/4 tsp Maldon Sea Salt
1 scoop Cipla Nutrition Whey protein (cookies and cream flavour)
A small handful of raw cacao nibs
1. Drain your dates and place sweetened espresso liquid into a jar into a fridge for another time! Place dates in a food processor along with your coffee, cacao powder, Maldon Sea Salt and Cipla whey protein.
2. Blitz until you have a smoothish mixture and everything has combined.
3. Spoon into a bowl and place into the freezer to set for an hour.
4. Remove from the freezer and roll into 15g balls. Roll these in some extra cacao powder and place into a jar or airtight container. Store in the freezer and eat as you please!

*I love to use my Giovanni's coffee capsules in my Caffe' Luxe machine to make a smooth, punchy espresso! However, instant coffee will do, too! if you go with the latter then I'd recommend Jacobs!
