Buttermilk Waffles with Vanilla Camilla

There's nothing quite as satisfying than having hot, crispy waffles covered in ice cream and chocolate sauce on a Sunday. Or any day really. Do you want to know the best thing about this recipe? It's totally gluten & wheat free, contains no added sugar and is ridiculously delicious.  So, are we winning or aren't we?

 

Buttermilk Waffles served with Vanilla Camilla & Dark Chocolate Sauce

 

1 ¼ cup buttermilk

¼ cup coconut oil

¼ cup organic agave syrup

1 egg

½ cup Gluten Free rolled oats (I bought mine here)

2 tsp baking powder

Pinch of rock salt

1 tsp pure vanilla extract (I only get mine from here)

 

To serve:

 

2 scoops Vanilla Camilla skinny scoop

25g chopped hazelnuts, lightly toasted

50g dark chocolate, melted (I used Lindt 85%)

 

  1. Whisk together buttermilk, coconut oil agave syrup, vanilla and egg.

  2. Add dry ingredients and mix until well incorporated. Allow to stand for 10-20 minutes

  3. Preheat and grease waffle iron according to instructions. Cook ½ cup of waffle batter at a time.

  4. Serve immediately with Vanilla Camilla, chopped hazelnuts and melted dark chocolate.

  5. NOTE that batter can be made a day in advance- just keep cold in the fridge!
