Chocolate Chip & Peanut Butter Protein Cookies

 There is nothing more comforting than having a cup of tea with a few cookies. The act of dunking biscuits into your mug and quickly popping them into your mouth reminds me of childhood and lazy Sunday mornings. These melt-in-your-mouth cookies are guilt free and 100% natural. Trust me, they're almost too good to be true. They are gluten free, wheat free, sugar free and high in protein. The consistency is fluffy and hearty, with the addition of oozing chocolate chips. I have used a sugar free chocolate but you are more than welcome to use some chopped 70% Lindt.



Makes 14 cookies


2 eggs

50g organic coconut oil

50g sugar free peanut butter

50g xylitol

60g ground almonds

20 dessicated coconut

30g coconut flour

50g sugar free dark chocolate, chopped (I use the Honest chocolate brand- the maca powder infused one for extra superfoody goodness!)

1 tsp bicarbonate of soda

1/2 tsp xatham gum (optional- this makes the consistency better)

30g whey protein


1. Preheat oven to 180 degrees C.

2. Beat eggs, coconut oil, xylitol and peanut butter until just combined.

3. Stir in your remaining ingredients.

4. Bake for 10-12 minutes. If you wish for them to be crispier then bake for a further 3-5 minutes.
